Northern Food Night (NFN) 2011 – An Arctic Culinary Adventure

At last, Slow Food Edmonton’s 5th Northern Food Night is set to happen! In the past, Slow Food members, Steve Cooper and Twyla Campbell have hosted the culinary extravaganza at their home in Sherwood Park. This year’s NFN offers something different: The dinner will take place April 16th, 2011 at Bistro La Persaud’s banquet room. The event will start with a sampling of hors d’oeuvres followed by a sit-down, five-course meal. Wine pairings and tales of Arctic adventures will accompany each dish.

This year, Steve and Twyla will be handing over the cooking reins to award-winning chef, Louis Charest from Ottawa, Paul Fink (Culinary Arts Teacher/Chef/Host of Food Network’s TV show, Fink), and the staff at Bistro La Persaud. Steve, Twyla, Chef Charest and Paul Finkelstein recently arranged and prepared a successful Northern Food Night dinner for the legendary Charlie’s Burgers in Toronto. The menu for April 16th’s Northern Food Night has been created by Chef Charest and will feature items like smoked musk-ox tongue, whale, Arctic Char caviar and sea urchin that Steve and Twyla just harvested from the waters of Hudson Bay. This dinner will be representative of the dinner the team will be presenting to the James Beard Foundation in May.

So, come out and get a taste of the North—the true North. Learn about the Territories, the people and the foods that have sustained them for centuries.
